Magnolia is a bit of a Jekyll/Hyde situation. Most of their cupcakes are frosted with the typical, insipidly-sweet American imitation buttercream listed in the recipe. But on occasion, they also put out cupcakes that have real buttercream on them. I suspect that this is why they are so famous, because their normal cupcakes are quite ordinary.

Real buttercream is made with boiled sugar syrup, egg yolks, and butter. It is very light in texture, not overly sweet, and indescribably rich, smooth and silky with a mellow butter flavor. I recently had a pistachio buttercream cupcake at Magnolia that was one of the most delicious things I've ever eaten.

So, if you go, be on the lookout for some cupcakes that have a silky-looking frosting on them that looks quite different from the dense, grainy, sugary, hyper-sweet frosting that has become the norm over the years. You'll never forget your first taste of one of those.

Magnolia Bakery is great. The flavors of the food there is so different from any other bakery. If you go to NYC, you MUST go there. And if you can't go there, here is the recipe for you to use at home!


The Magnolia Bakery Cupcake Recipe

Preheat Oven: 350 degrees F

Cupcake Ingredients
1 cup (2 sticks) unsalted butter, softened.
2 cups sugar
4 large eggs, at room temperature
1 ½ cup self-rising flour
1 ½ cup all-purpose flour
1 cup Whole Milk
1 teaspoon vanilla extract

Icing Ingredients
1 cup (2 sticks) unsalted butter, softened
8 cups confectionary sugar (powdered sugar)
½ cup Whole milk
2 teaspoons vanilla extract

TIPS: If you have a stand mixer (like a Bosch, or Kitchen Aid) this recipe is much quicker to make.
Using whole milk makes the taste of the cupcakes and icing much smoother. I tried using Skim milk and whipping cream just to test it out and whole milk makes a much better flavor.

Cupcake Directions
1. Whip butter until very smooth in texture
2. Add sugar 1 cup at a time, beating until smooth in texture
3. Add eggs, 1 at a time, beating very well between each addition
4. In separate bowl, mix the 2 flours together
5. In separate bowl, mix Milk and Vanilla
6. Add flour mixture and milk mixture 1 cup at a time to Butter mixture. Beating very well between each addition.
7. Spoon into lined cupcake pan (approx. ¼ c batter per cupcake)
8. Bake for 20-22 minutes in pre heated over (350 degrees F)

Cool cupcakes before frosting (or else the frosting will fall off)
You can also make 3 – 9” rounds with cupcake batter. Just make sure you grease and flour each pan.

Icing Directions
1. Whip butter until smooth
2. Add ½ of sugar (4 cups), 1 cup at a time. Beating well between each addition.
3. Add Milk, and Vanilla
4. Add remaining sugar, 1 cup at a time. Beating well between each addition.
5. Add a few drops of food coloring to icing
6. Beat icing well, until good spreading consistency.
7. Over-beating is hard to do with this icing.

Frost the cupcakes and then sprinkle them with sprinkles.

I was in the Magnolia Bakery today which enjoys enormeous popularity and a line of customers that wraps around Bleeker Street in the West Village. Their "cupcake" has made them quite famous, however, their arrogance and general attitude is noteworthy. I stood in the line for about 45 minutes to buy a cake as it was my neighbor's birthday. When I finally got in the door to browse the cake section, I was informed that I could only buy 4 pieces of cake. I said that I needed 6 pieces of cake at which time I was told I could go to another bakery. Now, I have lived in the Village for 22 years and this bakery is the closest to my house. I was taken back that they not only refused to sell me the six pieces of cake, but that they were so arragont and rude. Since the majority of their trade is cupcakes, I didn't see the logic in refusing to sell me 2 additional pieces of cake. As it turned out,the lady in line next to me heard all of this and offered to buy me the 2 pieces of cake and we setteled up on the sidewalk. As we were leaving, the cashier said "will that be one bag or two?". So, they knew that the put us in an awkward position and at the same time reduced their cake inventory by 2 more slices. So, to the Magnolia Bakery - It wouldn't have hurt you to be nice, rather than to tell me to go to another bakery. You should also state your policy on the outside of the store so that people don't stand in line for 45 minutes just to be told that you will not sell them what they want. The 6 pieces of cake were sold for the same price - to two people instead of one - I guess that was ok for them. LON
