A Cookbook for those who want to eat well (Ed grover appreciation w/o)

Pros: Easy to understand, some tasty recipes
Cons: Not all sugar substitutes are discussed, sometimes the instructions can be a little to simple.
The Bottom Line: I believe this is a good cookbook worth checking out. Particularly if you are diabetic.

I remember that one of the first reviews of Ed Grovers that I read was of one he did on a cookbook. I have not been around the way I was at one time, but I still read reviews especially if Im interested in a product. However, I happened to see the write off for Ed who is having a rough time with lung cancer so I had to write something for this great guy. Ed I hope my attempt at reviewing a cook book will bring a smile to your face. I am sorry I didn't get this in by the deadline but hopefully you'll still see it Ed
501 delicious diabetic recipes for you and your family is a good cookbook especially for those of us with diabetics. It has more than just recipes in it. The beginning of the cookbook has information on reading labels and how it is necessary to understand the labels for people looking to eat more nutritionally. Before I got diagnosed with diabetes I never really paid attention to the labels but it is certainly become a necessity and the information contained in this section certainly is helpful if you have never done it before.
They also discuss sugar substitutes and what the difference is between granulated, liquid, and aspartame sweeteners. Unfortunately, the book does not include Splenda ® in any of its recipes or its discussion of sugar substitutes. I find this one of the downfalls of the book. The book was written in 2000 I might be wrong but I think Splenda® was around at that time.
After the discussion on sugar substitutes we have the recipes. These are categorized in chapters in the following order:

2. Breads
3. Desserts
4. Fish & Shellfish
5. Meatless Main Dishes
6. Meats
7. Poultry
8. Salads & Salad Dressings
9. Soups & Sandwiches
10. Starch Side Dishes
11. Vegetable & Fruit Side Dishes
In the recipe section for each recipe on the left hand side of the page they provide nutrition and serving information. To provide and example of what type of information is given I am using the Linguine With Red Clam Sauce recipe.

Cook pasta until al dente: this means pliable, but firm to the bite and no longer starchy.
I like this feature of the book because it is important to know the amounts of carbohydrates I am eating and also the exchanges.
I have found a variety of recipes in the book which I would like to try. One I do enjoy is the Whole Wheat-Apple Pancakes and Harvest Corn Muffins . Corn bread has always been one of my favorites and finding one that is a little lower in carbohydrates is really nice.
The book is written for a complete novice to cooking and explains what to do very well and distinctly. Some times to the point of over instructing. I believe most people know how to cool a cake on a rack, but they explain exactly how to take the cake out and put it on the rack. I suppose though for some people this might be needed.
The book is published by Oxmoor House and was copyrighted in the year 2000.The editor of the book was Anne Chappell Cain who I feel did a good job of gathering a variety of recipes in each section. I certainly have not been able to try all of them, but the ones I have are really good.
On the whole I feel this is a good cookbook that is worth a look at. Especially if you need to watch your sugar level.
