Baby Shower Goodies

Mar 04 '03

The Bottom Line How do you win a pregnant woman's deepest affections? Read on...

Baby showers are such happy occasions! I should know, I've had a couple of back-to-back showers here recently! I've given a few in my day as well, and perhaps as important as the gifts is the food! Here are some of my most cherished party food recipes. Make sure they are at your next shower!

Every good party must begin with a good punch. Now, it is fine to do the "3 part Hawaiian Punch/ 1 part Ginger Ale" bit, but how impressive is that? If you want to knock their maternity hose off, try this one:

Lemon Refresher

· 1 ½ cups sugar
· 1/3 cup lemon juice
· 2 cups milk
· 1 Tbsp. Lemon extract
· ½ tsp. grated lemon peel, optional
· 2 liters Sprite or 7-Up

In a mixing bowl, beat sugar and lemon juice on high speed for 3 minutes or until sugar is partially dissolved. Gradually add milk, beating constantly on high. Stir in the lemon extract and peel if desired. Refrigerate until ready to serve. Stir in soda just before serving. Serve over ice. Yield: 3 quarts.

Everybody loves a warm dish. It seems that at every get together, someone brings the artichoke dip. I can promise this one is different, more decadent, and more delicious than any you've tried before:

Creamy Crab and Artichoke Dip

1 can (6 oz.) crabmeat
1 (8 oz.) pkg. cream cheese, softened
1 cup mayonnaise
1/2 teaspoon garlic powder
1/3 cup chopped onion
1 (13 3/4oz.) can artichoke hearts, drained and chopped
¾ cup shredded Parmesan cheese

Preheat oven to 375°. In a bowl, blend cream cheese and mayonnaise until smooth. Stir in remaining ingredients and place in a glass pie plate. Bake, uncovered, for 15-18 minutes, until heated through and lightly browned. Serve with assorted crackers.

No finger food affair is complete (at least in the South) without these little gems. I can eat the whole pan by myself, practically!

Poppy Seed Sandwiches

3 teaspoons butter, melted
4 tbsp. spicy mustard
2 tbsp. brown sugar
3 tbsp. poppy seeds
2 packages small dinner rolls (the kind with their own metal pan)
2 cups (8 oz) shredded Mozzarella cheese
2 (8 oz.) pkgs. Thinly sliced deli ham

Combine butter, mustard, sugar and poppy seeds. Slice unseparated rolls in half horizontally. Spread butter mixture over both sides. Place ham on bottom half of rolls. Sprinkle with cheese. Put top part of rolls over cheese and press lightly. Cover with foil. Bake on 250° for 20 minutes (or until cheese melts). Cut apart and serve.

You must have something sweet to balance out all of these savory dishes. Fruit is good for you, so make this delicious dip to spice up your five servings a day:

Can't Stop Fresh Fruit Dip

1 (8 oz.) pkg. Cream cheese, softened
1 (7 oz.) jar marshmallow crème
1 T. Orange juice
1 T. grated orange zest
½ tsp. vanilla
1/8 tsp. ground cinnamon

Combine softened cream cheese with marshmallow crème with mixer until well blended. Add remaining ingredients and blend. Serve with fresh fruit and cookies as dippers, or use as a sauce over fresh fruit.

Oh, yum. It makes me almost want to have another baby just to be able to have another shower! Almost...
