Recently, I made up my mind to purchase a "high quality" gas grill. I quickly narrowed my choices down to one of two grills: Weber Genesis Gold Series or the Sam's Member's Mark Stainless Steel model that they've been selling for several years for about $600. After reading many reviews of both grills and looking at them over and over in person, I decided to purchase the Weber over the Sam's grill.
The Weber was $50 cheaper but lacked several features (IR back burner, rotisseire, enclosed lower cabinet & BTU's), but seemed to make up for that in overall quality. The weber has stainless burners while the Member's Mark has cast iron. In numerous reviews, owners of the Member's Mark grill complained that the burners rusted very quickly. Both grills have lots of stainless steel including the exterior and the cooking surfaces (grill). Also, the weber has double-walled construction on the lid. There is an interior wall that protects the exterior wall from the intense heat and should prefect that burned look from ever showing on the exterior of the grill. These two differences were big selling points for me.
Both grills have three burners, but the Weber puts out less BTU's 39,000 vs 45,000 (I think). I was not worried about this because all the reviews of the Weber I read ranted and raved about how fast the grill gets hot and how it cooks so evenly. These are both very true. The grill heats to 550 degrees in 5 minutes or less. I'm still amazed. If you aren't there watching it'll get to 700 degrees in less than 10 minutes. Also, the burners are arranged differently. On the Weber, the burners run the lenght of the grill and a set front to back. On the Sam's grill, the burners run the width of the grill and are arranged left to right. The front to back lengthwise format of the Weber allows for cooking large items via the indirect method described below.
This leads up to the claims of perfectly cooked food every time. The grill comes with a guide to cooking on a Weber gas grill. The guide tells you by which method (direct or indirect) you should cook every type of food, at what temp (medium or high) and for how long. I have been following the guide and every single thing I've cooked has been perfect.
For the direct method of cooking, which generally applies to foods that will be fully cooked in less than 30 minutes, after the grill is pre-heated you cook the food with all three burners on (med or high) for the specified amount of time. With this method food is seared and/or turned once during the cooking process. It really works!!!
For the indirect method, after pre-heating, you turn off the center burner and place the foods over the center of the grill. The food is not over direct heat. The heat from the front and rear burner, with the lid closed the entire cooking time, cook the food in a fashion similar to a convection oven, but you get that wonderful grilled flavor. Very, Very easy way to cook things. The Christmas turkey was incredible this way and a pork tenderlion was one of the best things I ever ate.
The grill is very easy on the eyes, too. All exterior parts seem to be very high quality. There are extensive work surfaces. The model I purchased, Genesis Gold "B", does not have a side burner. It's the same size as the "C" model (which has the burner), but the "B" model has a work surface in place of the side burner. If you feel you need the side burner, you would want to step up to the "C" model.
Really, if you can deal with spending $550-$600 on a grill, it's a no-brainer. This grill is awesome.
