This is one of my very favorite summer dishes -- healthy cuz it's non-fat and yummy and quick. This is my staple "everyone brings a dish" dish for potlucks and parties and everyone always loves it.

Enjoy!

Ambrosia:

2 cans of mandarin orange slices
2 cans of pineapple chunks
1 tub of non-fat sour cream
Shredded coconut

Drain the orange slices and pineapple chunks and put them into a bowl. Cover with the sour cream and sprinkle coconut. (The amount of coconut flakes depends on your preference. I like A LOT. Brian likes none.) You might not need the whole tub of sour cream, depending on how saucy you want it. You don't want the fruit to get lost in the cream, but you do want it creamy, ya know? Sometimes I add marshmallows or a few maraschino cherries, but the basic recipe stays the same.

Mix it all up. Refrigerate. Serve.

I know my directions are not specific, but honestly, that's how I cook. I'm going to practice with some of my other favorites, write as I go, and then see if I can post more explicit instructions. I'm a good one for, "How much? I don't know.. til it looks right."
