Baked Amaretto Fruit - and if you're out of Amaretto, you get that recipe too!

This is a favorite take a covered dish type of recipe. Very easy to prepare, it only takes about 5 minutes to mix, 30 minutes to bake and the raves will continue for days! Every time I take Baked Fruit to a covered dish meal, everyone seems to fight over who gets to take the leftovers home (if there are any) and I am always asked to fix this!

My favorite thing about this recipe is that it is very easy to keep the ingredients on hand. I always have a selection of canned fruits, I buy bananas every week, I keep a package of Macaroons in the freezer, and I have a bottle of Amaretto in the cabinet that my niece made for me. I'm ready - all I need is a place to go! Plus, if I'm running late, my Baked Fruit can bake while I get myself dressed - 30 minutes bake time is perfect!

Ingredients:
Assorted canned fruits- peaches, pears, fruit cocktail, pineapple
Bananas
Macaroons (I use Archway brand)
Amaretto

The amount of fruit depends if you are making a large dish or a smaller portion of the Baked Fruit. I typically use one can of each of the above for a 9 x 12 dish, and only use 1/3 to 1/2 of the juice per can. Cut fruits into bite sized chunks. Slice (not too thin) bananas into the fruit. Again, the number of bananas will depend on your size dish. Crumble macaroons over the top of the fruit and splash macaroons with Amaretto. Bake 350 degrees for about 30 minutes, until the macaroons are nicely browned. Absolutely wonderful!

Are you all out of Amaretto?

2 cups boiling water
1 T Instant Coffee
3 1/2 cups sugar
1 Fifth (26 ounces) Vodka
5 Dashes Bitters
5 t Vanilla Extract (no imitation)
1 oz. Almond Extract (no imitation)

Boil water, stir in coffee, then stir in sugar. Add Vodka and remainder of ingredients. Pour into bottles and cork. Makes 2 Fifths This also makes a wonderful gift - my sister (Kat1021) and I made 21 Fifths one year to give as Christmas gifts!
