Fruit salsa for chicken

Yes, I like simple recipes. A few quality ingredients, minimal preparation and hardly any actual stove time. Especially in the summer! (The chicken in this recipe could easily be grilled in the backyard.) The thing about this salsa is that it's different, fruity, and people will think you're some sort of chef, when all you did was toss some stuff into a bowl.

Grilled Chicken with Fruit Salsa:

2 large oranges, peeled, sectioned and chopped

1 cup chopped pineapple

1/4 c finely chopped red onion

2 tablespoons lime juice

1 tablespoon chopped cilantro

1 small green chile (chopped)

8 (4 oz) boneless chicken breasts

In a medium bowl mix the oranges, pineapple, onion, cilantro,
lime juice and green chile. Cover and chill.

Grill (or broil) chicken over medium heat for six minutes on
each side (or until done). To serve, cut each breast into
four slices, arrange in a fan shape on a plate and serve
with 1/4 of the prepared salsa.

Serve it up with red beans and rice, mixed veggies with taco seasoning and tortillas. Perfect for a summer dinner.

(You can sub a jalapeno for the green chile and parsley for the cilantro.)
