Pans that is!
Don't become a newbie cookware purchase victim: get what you need only and ignore the pushy sales people and cookware retailers who tell you that you need multiple sauce pans, frying pans, stockpots and saute pans. Just ask a real chef, they will graciously tell you that you really only need three excellent pans for your stovetop cooking escapades!
(1) 3 Quart Sauce Pan w/Lid
(1) 12" diam. Saute Pan w/Lid
(1) 8 Quart Stock Pot w/Lid
Remember what Grandma used to say?? "You can always cook less in a large pan but you can't cook more in a small one!" She was right!
By limiting your pan purchases to these three large pans, you will save enough money to actually invest in lifetime quality commercial or professional cookware right from the start(Be aware: "professional" when used in packaging does NOT mean "commercial", it really means "residential use only" and is not as indestructible)
Your 3 Quart Sauce Pan will handle all your rice & vegetable cooking needs. Your 12" diam. Saute Pan (this is the straight sided pan that is wide and about 3 to 3-1/2 inches deep) will fry eggs (no problemo!), make great one pan meals, simmer all your sauces, cook your pork chops, etc. The large capacity of this pan is ideal for quick cook meals. But if needed it will still fry one egg! Your 8 Quart Stock Pot will boil your pasta, simmer your soups and steam your artichokes with ease. Remember that you want your pasta to swim freely in at least 8 quarts of boiling water in order to stay al dente.
Investment pans last more than one lifetime and can actually be handed down through the generations. My family has their eye on all of my Mauviel copper pans, they could care less about the rest of the things in my house!
