My Veggie Chickpea Burgers

I had to submit one of my favorite vegetarian recipes. I like this one because the coconut adds a special flavor and texture to the burgers. I usually serve them on lightly toasted wheat buns with a couple slices ripe tomatoes, onion, and cucumber slices. For dressing I like just a bit of honey mustard. I hope you enjoy this!


TERESA'S VEGGIE CHICKPEA BURGERS

1/2 cup canned chickpeas
1/2 cup shredded unsweetened coconut
2 tablespoons tahini
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon sesame seeds
1/2 teaspoon curry powder

Combine the chickpeas, tahini, parsley, salt, pepper,sesame seeds, and curry powder in a food processor or blender until it forms a smooth dough. Then roll the mixture in 4 balls and press into patties. Dip the patties in the coconut. Place then on a greased cookie sheet and bake for 20-30 minutes in a preheated 350F oven. ENJOY!!!
