This is located in the dock area of California Adventure (The cannery theme area.) It is located right across from the Boudin bread making tour. It is also between the bugs life area and the boardwalk area.
California Adventure is the newer park at the Disneyland resort (Anaheim, Ca.). California Adventure is smaller than Disneyland but still worth a visit, especially if you have the park hopper pass.
About the tour.
First, just like the Bakery next door there is no line. You just wait outside until the short video finishes. Then an attendant lets you in. The first room is small but not so small that we had to wait because it was full. It is a self-guided tour, no Disney employee escorts you around.
This is a small walking tour of a small working tortilla making factory. You first start out in a small room and listen to a lame video. It tries to emulate an elementary classroom video presentation on the history of corn and the tortilla. It has a blatant advertisement for the corn meal used. If you want you can just walk through the doors and go straight to the second room. People may stare at you in a strange matter but pay them no heed.
The second room is cute video of a family making tortillas. Its kind of funny because a brother harasses his sister in the video. There are 4 viewing stations with steps for the younger individuals. Just keep in mind that there are only 2 video clips. It uses the same projection technology as some old upright video games. My friend at first thought it was a hologram but it is not that sophisticated, but it does look nice.
After that you go through a second door into the small factory. There are two large machines in the room that make tortillas. One is for Flour and the other is for corn. Only one machine is running at a time (at least every time I have gone which is about a dozen by now.) The machines are clearly labeled and state the process. It is very informative and if you take the time to read it you will learn something. At the end of the machine is a worker that is handing out samples of the fresh tortillas. I love the fresh corn ones.
The extra tortillas (and there are a lot of them) go straight into the restaurant next door that sells tacos and other Mexican/southwest style foods.
There is also a little stand, improvised kitchen where someone is making food. There are also little cards that give you a cooking idea. I thought it was a stupid idea but my wife grabbed a card and the meals she made (about 4 now) were actually pretty good. The meals posted on the card are also designed for a family that does not have time to cook.

-Lame video.
Why go to this?
Basically to get a snack or take a short break from the hecticness of the park.
Hidden Mickey's
I've found two and both are in the main lobby/video area. The most obvious is a mickey in the rod iron on the door in that room. The other is in the tomatoes above the doors.
Summary
This is a cool little attraction that is a nice little stop between rides. And you get a free sample too. If you have a limited amount of time then I suggest you skip this attraction and ride some of the more exciting attractions. If you want a short break and free snack then stop by.
