The Bottom Line: The Garden Island, need we say more? The Poipu Plantation Resort was a great place to stay while breathing it all in.

My wife and I visited Kauai in August 2003 for two weeks, spending a week on the eastern side of the island and a week down south. We try to stay in B&Bs wherever we go and we found a doozy adjacent to Poipu Beach, in the town of Koloa. Its called the Poipu Plantation Resort. There web site is http://www.poipubeach.com/.
This is both a B&B and a collection of one- and two-bedroom cottages. If you stay in the B&B, you're "one of the family" and are served a delicious breakfast every morning. If you choose a cottage, you have more independence, your own kitchen facilities, and a good-sized living area. My wife and I stayed in the B&B, in both the Master and King rooms during the week we were there. We had to change rooms two days before our departure because we didn't book the Master room soon enough (recommend booking at least 5-6 months in advance).
Both rooms were COOL (temperature-wise that is) which was one of our primary requirements. The A.C. was refreshing and both rooms we stayed in were comfortable and spacious. The thing that sets this B&B apart from others we've stayed in were the staff. Chris (the owner) and Javed (the Manager and Chef) were very friendly and helpful, attending to our every need, and providing us with excellent travel tips, directions, and activity suggestions. They also stock a lot of equipment such as snorkel gear, beach chairs, umbrellas, beach mats, and beach towels - just take whatever you need was there motto. The hot tub was phenomenal!
This B&B was just a short walk to Poipu Beach, right in the heart of the southern side. From here, we ventured out to the west side of the island almost everyday, including Waimea Canyon, Hanapepe (where we caught our helicopter ride), Port Allen (where we embarked on a 7-hour boat/snorkeling trip to the Napali coast and Niihau, the forbidden island), and a variety of snorkeling spots. For a great introduction to snorkeling, try Snuba -- http://www.snubakauai.com/. This locale in Koloa is also less than 30 minutes to Lihue, and you can make it up north in less than an hour.
Kauai is our favorite island and my wife and I highly recommend the Poipu Plantation Resort !!
